I LOVE chocolate…. in fact, I don’t think I have ever met anyone who doesn’t! However I like REAL chocolate… the one full of antioxidants that you often read about in the media; the one that is raw, unprocessed and full of goodness which has absolutely nothing in common with the chocolate pretend bars we find in every shop in the country. Have you ever looked at the ingredient list? I suggest you do!
Ok getting back to REAL CHOCOLATE… this recipe is quick, no cooking required and it will give you the best chocolate you have ever tasted!

INGREDIENTS

1 cup (250g) Raw Cacoa butter
4 tbsp coconut oil
1 cup raw Cacoa powder
1 tbsp. maca powder
1 tsp vanilla powder
4 tbsp. organic maple syrup
pinch sea salt
2 thumb sized pieces of ginger peeled
1 cup pecan nuts
1 cup goji berries

METHOD

Melt your CacAO butter and coconut oil together in a bowl over boiling water (au bain marie). Once the water is boiling turn the heat down and slowly melt the butters.

Once it is melted add to a powerful blender together with the cacao powder, 1 thumb of ginger, the maca powder, maple syrup, salt and blend until you get a smooth glossy shine.

Pour onto a bowl and add your chopped pecan, the remaining ginger also chopped and the goji berries and mix well.

Line a shallow baking tray with cling film (this makes it easier to take out later on) and pour the mixture in. Let it set in the fridge for about 30 minutes. Once ready, chop it and enjoy!

This can be stored in an air tight container for up to 10 day in the fridge or you can freeze it.
